way I got started with the Jersey cows.

Interviewer: But you prefer Jerseys over all other breeds?

Orson Clark: They were good cows, they produced well and I liked them.

Interviewer: I still like milk from a Jersey cow better than from Holstein. But now you can't tell. All you do is get the bottled, you don't know where it comes from. I think most of the dairies how have Holstein cattle anyway.

Ruth Knowlton: Clark, there are some dairies where you can still buy Jersey milk.

Interviewer: There used to be Golden Guernsey Dairy, I remember that. But I haven't heard about that for a long time.

Ruth Knowlton: I remember the Highland man, when we started taking milk from Winder Dairy. He wanted to sell me milk. We had come up from El Paso where our children were used to raw milk. They wouldn't touch the milk from the store. They liked the Winder Dairy milk. I said, "I suspect it's because it is Jersey milk." He said, "I can provide you with Jersey milk. Let's form a test. You get a bottle of yours out and I'll bring you in a bottle of Jersey milk. We won't show them what they are and we'll pour it in a glass and have them taste it." So we did, and guess what? They chose the Winder Dairy milk. He was very unhappy. But it was a sales pitch. He was a member in our ward who wanted me to become his customer.

Orson Clark: Well he was used to the people who tested those.

Ruth Knowlton: Our children had become used to the one kind of milk, and it did taste different.

Orson Clark: That's right.

Ruth Knowlton: But I did learn from that, that you could request and buy from Highland Dairy and from Winder Dairy in Salt Lake.

Interviewer: Coming back to Oregon, what church positions did you hold there?

Orson Clark: I was a teacher in various organizations: Sunday School and M.I.A. and the Teacher Training. Then I was on the High Counsel.

Interviewer: For years, I imagine.

Orson Clark: Yes, for several years. The stake had just been divided a while before we went up there and it was a new president.
